Been a new type of cooking for me lately, but your never too old to learn so regional specialties ??

Couple types of BBQ sauce. In general ....

Carolina's knows for vinegar, hot sauce, salt, pepper, sugar and cayenne. Clear (ish) and bites back.

Memphis style is served w/o a sauce, but has sauces available that are ketchup based

Kansas style is similar to Memphis but is geared towards the sweet tooth.

My Favorite sauce
5 cups catsup
1 cup Yellow mustard
1 cup tarragon vinegar
1 1/2 cups honey
1/4 cup Molasses
5 teaspoons Worcestershire sauce
5 teaspoons hot sauce
8 teaspoons chili powder
3 teaspoons red peppers
16 garlic cloves
7 medium onions
1 Large bell pepper minced
1/2 cup water

Little different than a BBQ sauce.. They call it moppin sauce in So Carolina..

Got a BIl that moved out here a few years ago from there and is one of the best cooks ive ever been around..We've battled over the Q for a while and Im still partial to my dry rubs over his wet stuff,but this mop sauce is BY far the best thing I've ever had on grilled chicken..

Little challenging grillin in a 2 inch downpour yesterday,but I got it done !!! and not complaining about the rain..
