One of my favorite all time chef's. During a trip to New Orleans many years ago, we took a full day cooking class with him. One of the best vacation side items we ever did.

I own 2 of his cookbooks and both are well used. His restaurant was always a must do when in N.O. That is sad to hear.

Great man, great cook. Expanded "Cajun flavor" from New Orleans to most of North America! RIP Chef Paul!
