glazed salmon

Today I found wild caught salmon on sale at my local market. I don't like to farm raised stuff, so I always hold out for wild caught on sale. Here is how I cooked it. Turned out amazing!!!

1 lb salmon filet with skin on.
Olive Oil
1/4 cup Shallots Minced
2 Cloves Garlis Minced
1" Fresh Ginger Root Peeled and Minced
1/4 Cup Soy Sauce
1 tbs. Basalmic Vinegar
2 tbs. Brown Sugar
Juice from 1 Lime
Salt and pepper

In an oiled skillet, over medium heat, sautee the onions for 2 minutes. Add garlic and ginger, cook for 1-2 more minutes(don't let the garlic get bitter by over cooking). De glaze the pan with soy sauce, add sugar and vinegar. Place salmon in pan skin side down, salt and pepper to taste. Cover and cook until about 1/2 done, then squeeze lime juice over fish. Continue cooking until done. Place salmon ovnto serving platter and cover with sauce from pan. Delightful!
